Everybody loves tacos, burritos or quesodillas. One thing you need to keep on hand is flour tortillas. Leftovers often make good fillings for tortillas. Last week I had meatballs left from a spaghetti dinner so I took mozzarella cheese and chopped up some meatballs. I laid out a tortilla and laid cheese and meatballs down the center. I folded it up like a burrito, put it in the microwave and made a meatball snack. I had chicken left from a whole chicken the night before so I stripped the bone added ranch dressing and shredded cheese, warmed them up for 45 sec. and had my own chicken snack wraps.
Other times I fill them with scrambled egg, crumbled bacon, mushrooms, and shredded cheese and make my own breakfast burrito.

what's to eat today
I like to cook and try new recipes, what do you make for dinner when you have limited funds and still need to feed kids. I went back to something that my mother and husband both use to make. I am sure that everybody has basic white rice on hand. Usually you it for Spanish rice or as a base for beef stew.
When my mother was young, it was during the tail end of the depression, food was rationed and many of the cereals we have today didn't exist so they cooked white rice and added sugar, milk and butter making it like a hot cereal. My kids seem to enjoy it.
